Bacon and Egg Summer Salad

Who wants to turn on the oven when it’s 99 degrees outside? Not I! During the Summer months, having salads for dinner is the best! It just feels right. To be totally honest, we also make salads all year round because they just taste so darn good. The Apple Cider Honey Mustard Vinaigrette goes with this salad perfectly. We usually pair this salad with rolls, bread sticks, or garlic french bread.

How to get Picky Kids to Eat Salad?

If you want to appease those picky kiddos, you could even serve some good ol’ Mac n’ cheese as side. It’s a great negotiation tactic to leverage some mac n’ cheese to ensure they eat some of their salad. I’m not condoning bribery… I’m out right encouraging it!

Another bribe I utilize to “encourage” the kids to eat their salad, is including some juice or fruit as a side. Juice is pretty special at our house because we don’t have it very often. It’s an easy item to cut to save money on our food budget. Basically, I tell them they can’t have the juice until they eat their salad and it usually works!

Bacon and Egg Chef Salad

This Salad is a little more hearty and so can take its place, center stage, as the main course of the meal! Its a great meal for those hot summer months
Servings: 6 Adults

Ingredients

  • 6 Hard boiled eggs 1 egg per person
  • ½lb to 1lb Bacon but into small strips
  • 1 head of green or romaine lettuce I typically don't use the entire head of lettuce
  • 1-2 carrots chopped into small pieces
  • 1 cucumber cut into quarters
  • 1-2 tomatoes
  • 1-2 avocados optional

Instructions

  • Prepare the hard boiled eggs. Meanwhile, chop bacon into small strips to make bacon bits. fry them in a pan. Remove and place on a plate with a paper towel soaking up excess fat.
  • Chop all the veggies and toss in a salad bowl. Cut avocados if you're adding them and place them in a small bowl. Cut the Eggs into small bite size pieces and place both the bacon bits and eggs in separate small serving bowls.
  • Drizzle Apple cider Honey Mustard dressing on the salad. Serve with homemade bread, rolls, breadsticks or garlic french bread.

Notes

*This Salad could also be known as “What do I Need to Use up in my Fridge Salad“. If I have extra celery or bell peppers or another kind of veggie, I will add it to the salad! 

Bread as a Side to Salad

Although, this salad is more hearty than others, it still needs a side to really make it filling. I recommend making bread, rolls or breadsticks. Find the awesome breadstick recipe here! I altered this recipe to be dairy free by substituting olive oil for the butter. You can also go pick up a loaf of french bread at the store and it cuts down your prep time significantly. My family loves garlic bread with this salad!

Apple Cider Honey Mustard Vinaigrette

This homemade dressing uses basic ingredients but gives salad a punch of flavor!

Ingredients

  • ¼ cup apple cider vinegar
  • ½ cup olive oil
  • 3 tsp dijon mustard
  • 1 garlic clove minced
  • 2-3 tsp honey
  • 1 tsp salt sea salt if you have it
  • ½ tsp freshly ground black pepper

Instructions

  • Add all ingredients into a blender and blend until combined or add to a mason jar and shake to combine. Taste and add more salt and pepper if needed.

Best Knife Ever!!
