In my humble opinion, chocolate zucchini muffins make for a fantastic breakfast, lunch or snack. Why you ask? Although these muffins are full of chocolatey goodness, they also do not lack in the “healthy eating” department. They are made with a good dose of whole wheat flour, zucchini, and apple sauce. Yes, they are a sweet treat but they do provide some health benefits that your traditional “chewy bar” snack does not. Anytime I can justify eating chocolate is a win. Am I right?
How Simple is this Zucchini Muffin Recipe?
These zucchini muffins require some effort but it’s a very basic recipe. Basically, you combine the dry indigents and wet ingredients separately and then mix them together. Pretty easy!
Are these Chocolate Zucchini Muffins Budget-Friendly?
I have to say these muffins are indeed pretty affordable but with all things it depends on the ingredients you buy. So, if you buy expensive chocolate chips that will up the price on these puppies. If you choose to buy all things organic, then yes, it will increase the cost. I try to find the best deal I can on decent quality food and so typically, when I make things from scratch it is more affordable than buying them. That said, I’m not loyal to brands and I don’t feel like I have to get all organic foods.
Dairy-Free Chocolate Zucchini Muffins
If you’ve read a few of my posts, you know that we eat mostly dairy-free. Thus, I’m on a constant quest to find ways to make my food dairy-free and delicious. Typically, I substitute oil for butter and almond milk for cow’s milk. Those two substitutions are the most common for baking. Sometimes, I will just use dark chocolate chips instead of getting the dairy-free chocolate chips because it’s usually cheaper. However, there is still a small amount of dairy in the dark chocolate chips, so please check the label and make sure the ingredients are compatible with your dietary needs.
Products I love!
Here are some products I really like! The muffin tin is not your typical muffin tin but I love how easy the muffins come out. You just let them cool for a bit and they come out pretty easy and bake very evenly but they are smaller (which I like).
This type of grater is great! No pun intended, actually I really did intend for that pun. This grater is easier for kiddos to use and I love how the grater attaches to a container which is very convenient!
