My pickiest kiddo loves this recipe and she doesn’t even complain about the carrots I try to hide in the spaghetti sauce! Recently, I decided to use a finer grater and you can barely even see the shredded carrots. A “Mom win” right there! I use this recipe about 2-3 times during the month because it’s something most of my kiddos are excited to eat.
Alternative to Pasta
I’m not the biggest fan of pasta. I’m sorry! I know this may come as a shock to many of you but I have to stand in my truth. Thank you for your love and acceptance. Here is an alternative to Spaghetti noodles. If you have a fancy sh-mancy’ vegetable cutter, you can make zucchini spirals that look like “noodles”. I just sauté them in olive oil for a few minutes, add salt and pepper and Bam! You have achieved zucchini noodles!
Spaghetti with Meat Sauce
Ingredients
- ½ onion. chopped
- ½ lb ground beef or Italian or hot Sausage
- 1 carrot, peeled
- 1 15oz can tomato sauce original recipe uses 28oz. can
- 1 Tbsp dry Basil
- ½ tsp Nutmeg
- 1 can diced tomatoes or can diced Fire Roasted tomatoes adds more flavor
- 2 Tbsp butter optional
- ¾ 14.5oz package of thin spaghetti (16 oz) or use spiraled zucchini (just sauté in pan)
- Salt and Pepper to Taste I usually add a tsp or more
- Red Pepper Flakes (optional but it shouldn't be)
Instructions
- Bring a large pot of water to a boil. Cook thin Spaghetti according to package instructions. Drain.
- In a large pan, sauté onion in a little olive oil until translucent. Add beef and cook until brown and crumbly. Grate Carrot and cook for a minute. Add tomato sauce, basil, salt, and nutmeg. Simmer sauce on medium heat for about 10 min, stirring occasionally.
- Optional: Stir in butter and remove from heat.
