Easy Homemade Blueberry Syrup

Pancakes with almond yogurt and blueberry syrup

This homemade blueberry syrup is so yummy on pancakes! I use fresh or frozen blueberries I have on hand. Bam! Delicious syrup! You might think that I am trying to be an awesome mom and go the extra mile by making homemade syrup for my kids. Totally think that if you wish because it makes me feel awesome. The truth is, I was not being extra fancy on purpose, I just ran out of the regular syrup. As a result, I had to get creative. A wise professor once instructed me that conflict ignites creativity! He was so right!

A Blueberry Hack!

Frozen fruit can be pretty pricey and so I’m sharing how I keep my frozen fruit costs low. Usually, the month of May kicks off the commencement of great deals on blueberries. A good deal in Colorado is about $.77 to $.98 for 6oz. So, when these prices start popping up, usually at Sprouts, I buy a bunch and freeze them. I rinse them, pat them dry and then freeze them spread out on a cookie sheet. This allows the berries to freeze without the berries clumping together. My kids love eating frozen blueberries as a snack. In addition to a great snack, we use them for pancakes, smoothies, or muffins. I’ll freeze them like this then put them in bags. It works great!

Yogurt is a Great Addition to this Blueberry Syrup

We like to make both almond yogurt and regular dairy yogurt. It’s a healthier option than whipped cream and it tastes oh, so good! Of course, my kiddos try convincing me ice cream is very rich in calcium and so that should be considered as an alternative to yogurt.

How to Make this Awesome
Homemade Blueberry Syrup!

  • Place the sugar in a pan with the ¼ cup of water over low heat and stir until the sugar has dissolved. Increase the heat, add the blueberries, cover, and cook for a few minutes or until they start to soften.
  • Remove from the heat. Mix the arrowroot or cornstarch with 2 Tbsp of water in a bowl or measuring cup. Add the mixture to the fruit, and stir until smooth. Return to low heat. Cook until the juice thickens and turns translucent.
  • Let it cool a bit. Chill until ready to serve or serve immediately, enjoy!

Fresh Blueberry Syrup

If you want to change up your pancake breakfast, this syrup will definitely spruce it up! This delicious syrup is also great to drizzle over cheesecake or ice cream!

Ingredients

  • ½ cup granulated sugar
  • ¼ cup water
  • 1 ½ cups blueberries, fresh or frozen (you can also do 2 8oz packs)
  • 2 tsp Arrowroot (or sub cornstarch)
  • 2 Tbsp water

Instructions
