Why call them”Bible Sandwiches”?

To answer this question, I have to harken back to my youth. We called these sandwiches, “bible sandwiches” because the pita bread looks very much like unleavened flat bread, which is referenced in the bible a few times. Although pita bread can be unleavened, for this sandwich, pocket pita bread has some leavening agents. Here is a recipe, if you would like to make your own pita bread. I typically just purchase my pita bread because it’s pretty cheap but making it from scratch is delicious.

Pita Sandwiches: A Meal your Whole Family will Love

I remember being very excited to eat Pita sandwiches as a kid. It was such a fun and delicious dinner. Particularly, the whole build and design your own sandwich was very intriguing. I’m sure it was also a meal my mom liked because everyone can create something to eat that they like. At least, that’s how I feel about this meal. Overall, there are less complaints when we eat Pita Sandwiches. Essentially, it’s like having a personal Subway right in your kitchen, except way better.

Side Dishes that Pair with your Pita

Do you need to have a side dish? No, these sandwiches are fine alone, however, sometimes it can be more cost effective to stretch your meal by adding sides. A Fruit Salad is a great option to serve with pita sandwiches. Not only, are they easy, it’s a fantastic way to use up extra fruit before it goes bad. Hurray for less waste! Chips are another great idea, if you are wanting a simple and fast meal.

Some example of Sides that require a bit time work but still are very easy are roasted potato wedges and roasted cauliflower. I can usually get a head of cauliflower at sprouts for $.98, which is very awesome!

Mom Hack for Picky Eaters!

This meal presents a great opportunity for those picky eaters out there. For instance, when my two girls, who are extremely vegetable resistant, see the platters of vegetables they first have a bit of a negative reaction. They immediately want to retreat, arms folded, whilst stomping away with their noses held high in the air. Sometimes, it can be so frustrating dealing with these persistent little people. So, here’s the magic. I don’t push all the vegetables on my kiddos but ask that they choose 1 or 2 (like an optometrist, insert comedic cymbal crash here!). When my girls realize they only have to choose one or two, they fee like I’m giving them a deal. It’s a win, win!

Pita Sandwiches (Bible Sandwiches)

A different twist on your typical sandwich. It's fast, easy and perfect for those warm summer nights. Serve with a side of chips, fruit salad, and you've got yourself a delicious dinner ready in just 30 minutes!

Ingredients

  • 8-12 Pita Pocket
  • 4 oz Cream Cheese, softened Dairy Free version see notes below
  • 1 lb Bacon, cooked
  • ½ lb Ham (Deli Style)
  • 2 Avocados
  • 2 Tomatoes, sliced
  • ½ Red Onion, sliced
  • 1 cucumber, sliced thinly
  • 1 Red Bell Pepper, sliced in to thin, bite size pieces
  • lettuce, almost shredded

Sautéed Mushrooms

  • 8 oz Whole Mushrooms, sliced
  • 2 Tbsp olive oil
  • 1 Tbsp Butter or Bacon Grease you can reserve some grease from the bacon
  • Salt and pepper to taste
  • ½ tsp Worcestershire Sauce optional (add more to your taste)

Instructions

  • Cook the bacon. Two methods:
    1) Oven baking- place bacon on a foil lined cookie sheet and bake for 20 minutes in a 400° oven. I prefer this method!
    2) Stove cooking: Place the bacon in a skillet and cook on the stove, flipping it mid way through.
    Once the bacon is done place on a plate covered with a couple paper towels to soak up the extra grease.
  • While the bacon is cooking in the oven. Prep and cut all the vegetable and toppings. Either leave the cream cheese out to soften to room temperature or place in the microwave for a few seconds (7 seconds or so).
  • Place the oil and bacon grease or butter in a skillet on medium high eat. Once oil is warm, place mushrooms in the pan. Cook until mushrooms soften (about 5 minutes) add salt, pepper and Worcestershire sauce. Cook 2 about two more minutes and then you're done.
  • Place toppings on a plate or platter and let everyone create their own pita sandwich heaven!

Notes

Dairy Free Version: Use hummus, mashed avocado, guacamole or mayonnaise to be the spread for the pita pockets. 
Vegan/ Vegetarian Version: This meal is a great option for the Vegan or vegetarian diet. The sautéed mushrooms act as the meat. Simply, sauté the mushrooms in olive oil. If you’re vegetarian just omit the meat and if you are vegan, use avocado as the spread. If you would like additional protein, add some garbanzo beans.
