Fresh Strawberry Pie is one of my favorite desserts! The Fresh Strawberries combined with a dollop of fresh whipped cream is down right mouth-watering… I’m totally salivating right now! Not to sound too redundant but I seriously love this pie. Surprisingly, I’m not the only one who is obsessed with this pie. My Family, extended family, and any of my friends who try it, walk away with a profound, unequivocal love for this dessert. I might be going a bit too far but I don’t think I’m over-exaggerating too much!
Fresh Strawberry Pie: A Great Dessert for Summer
This pie is great to bring to special occasions. I especially love to make it during the summer months, when strawberries are on sale. May has amazing deals on strawberries. I’m talking a good deal like $.88 per pound of Strawberries at my beloved grocery store, Sprouts! So, Memorial Day is a great fit for this dessert. In addition to Memorial Day, the 4th of July is another great time to make this refreshing pie! Gotta love how vibrant the strawberries look against the blue pie plate and then add the whip cream! I mean, forget about it!

Fresh Strawberry Pie
Ingredients
- 4 Cups strawberries
- 1½ Cups water
- ¾ Cup sugar
- 2 Tbsp cornstarch
- 3 oz package strawberry jello
- Freshly whipped cream or Almond or Coconut Cream if Dairy Free!
- 1 prepared baked pie crust (see pie crust recipe on my blog)
Instructions
- Cut stems off strawberries and leave whole or at least in large pieces. Place in pie shell.
- Combine water, sugar and cornstarch and cook over medium heat, stirring constantly until it comes to a boil. Continue on low heat for 2 minutes until it thickens and is clear. Add jello to mixture and stir until well combined. Then pour, while hot, evenly over strawberries. Chill until set.
- Serve with freshly whipped cream!
