Are you totally confused about the title? What in the world are chicken lollipops? Maybe you know exactly what I’m referring to but in case you do not, don’t worry! You are not alone. When my husband brought up making chicken lollipops for the first time, I thought he was being weird. However, Making chicken into a lollipop is not some strange, protein enriched type of candy. It’s merely a way to butcher the chicken so it resembles the beloved lollipop. Watch my video and you shall see how tasty a grilled chicken leg can be.
Why put forth the Extra Effort to make a Lollipop?
I hear you loud and clear. Sometimes, all we have time for is to pour cereal in a bowl, add milk and voilà, dinner is served! But just in case you do have time making your chicken into lollipops, there are some perks I gotta mention. When you clean the bottom half of the chicken leg, it makes it very easy and clean to eat. Eating chicken legs can be pretty messy because normally the whole thing is seasoned and covered in juices. After grilling the Lollipops, you have a fairly clean and dry bone to hold onto. It’s almost like a built in eating utensil… maybe.
My Simple and Delicious Chicken Rub
This Rub is great for Chicken legs but we also use it when we do pork loin on the grill. This rub is extremely versatile. So, go! Fly! Be free and sprinkle this rub on whatever meat you wish. Typically, I have these spices on hand and so it’s a pretty convenient dinner, especially when my husband does the grilling!

Best Sweet and Spicy Chicken Rub
Ingredients
- 2 Tbsp Brown Sugar
- 1 Tbsp Salt
- ½ tsp Black Pepper
- 2 Tbsp Paprika
- 1 tsp Chili Powder (I usually use 2 for spice)
- 2 tsp Onion Powder
- 2 tsp Garlic Powder
- 1 tsp Ground Mustard
- ¼ tsp Cayenne Pepper (add more for more heat)
- ¼ tsp Thyme
Instructions
- Mix together and make sure the brown sugar is incorporated well. Then rub it onto to your meat. Grill and Enjoy!
