Healthier Oatmeal Cookies

Healthier Oatmeal cookies are a great snack or dessert. I feel like these cookies can be a great alternative to granola bars. Granola bars are great but when I make them at home, they haven’t worked out quite right. Moreover, they would be too crumbly and with that too messy. So, I haven’t found the perfect recipe yet. But not to fear! My healthier oatmeal cookies are a great snack to take on the go.

Why are these Cookies healthier?

The original Coconut Oatmeal Cookies contains butter, more sugar, and uses all-purpose flour. I changed up the recipe so I could feel a little better about offering it as a snack. I substituted the cup of butter with half of a cup of applesauce and the other half with coconut oil. Studies have shown that Coconut oil isn’t necessarily more healthy than butter. Joyce Hendley from EatingWell suggests the same findings that it’s really a draw between the two. However, the apples sauce does cut down saturated fats.

They were both considered nutritional bad boys at one time for their high content of saturated fat, but both coconut oil and butter have gotten a bit of an image makeover in the past few years.

Occasionally, I will use half whole wheat flour and half all-purpose flour. The Whole Wheat provides more fiber and additional nutrients than all-purpose baking flour. Find more information about flour from The Spruce Eats.

Healthier Coconut Oatmeal Cookies

These healthier oatmeal cookies are great snacks for kids. They taste so yummy but have some health benefits that your regular oatmeal cookies do not have.

Ingredients

  • ½ Cup coconut oil (Member's Mark Organic Virgin Coconut Oil) or substitute butter
  • ½ Cup applesauce
  • ¾ Cup sugar
  • ½ Cup brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 tsp  salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 Cups flour (2 cups up to 2 1/2 cups if needed) you can also to half whole wheat flour
  • 2 Cups oatmeal1
  • ½ – 1 Cup coconut
  • 1 tsp almond extract (optional)

Instructions

  • Cream together butter, sugars, eggs and vanilla. Then add the coconut. Set aside.
  • Mix all dry ingredients together in a separate bowl.
  • Add dry ingredients to wet ingredients and mix well.
  • Spoon onto greased baking sheet. Bake at 350 for 8-10 minutes. ENJOY!
