Quick and Easy Korean Beef

I love food and I love to cook but I’m gonna’ be real with you.
Sometimes, making dinner can be the last thing I want to do, especially when life is busy and mama is tired. Fortunately, I have a few recipes that come together pretty quickly and that makes dinner doable and not so burdensome. I would like to introduce you to Korean Beef, one of my favorite quick and easy meals. Another perk to this dinner, is its versatility. I shall explain, if you want to fancy it up, you can add pickled onions and top it with a fried egg. Or you can keep it really simple and just stick to the beef, rice, carrots and cucumbers.

My husband’s family introduced me to authentic Korean food and I fell in love pretty much instantly. This meal is not authentic Korean but it definitely comes close, which is nice because we never go out to eat! Furthermore, this recipe is quick and easy but packs so much flavor.

Quick Korean Beef

Korean Beef is a quick but also delicious meal that is a great option for those busy nights!

Ingredients

  • 1 lb. lean ground beef
  • 4 cloves garlic minced
  • 1 Tbsp fresh ginger minced 2 tsp ground ginger
  • 1 tsp sesame oil
  • 2 Tbsp brown sugar
  • ¼ cup soy sauce
  • 3 tsp chili garlic sauce (Huy Fong Foods Brand) or Sriracha hot sauce
  • Fried or soft boiled for each person eating optional but oh so good!

Toppings

  • ½ cup sliced green onions
  • 1 medium cucumber, sliced
  • 1 cup matchstick carrots
  • 1 tsp sesame seeds for garnish optional
  • pickled onions, Kimchi or shredded cabbage optional
  • Red pepper flakes Optional

Instructions

  • Start cooking the rice.
  • Brown the ground beef, garlic and ginger in a skillet over medium heat, breaking the ground beef into small pieces until no longer pink. Drain any excess fat and return skillet to stove top.
  • Add in the sesame oil, brown sugar, soy sauce and chili garlic sauce and bring to a simmer, stirring until the meat is moistened and the glossy. Add in half of the green onions and cook until fragrant, about 1 minute.
  • Serve the ground beef mixture on top of the hot rice along side the cucumbers and carrots. Garnish with additional green onions, sesame seeds and other toppings if desired. Enjoy!
