Rice Krispy treats are one of the best desserts! They are so easy to make and taste so flippin’ good! Why do I use Coconut oil? I will shed some light on this topic of extreme importance (I crack myself up!). I prefer the coconut oil because most of my family is sensitive to dairy. Secondly, the coconut oil I use adds a slight coconut flavor and it’s super delicious. I use the Members Mark Coconut oil from Sams Club. It’s great for desserts because it does retain the coconut flavor. However, you can easily substitute butter for the coconut oil. Trust me, before we did all the no-dairy stuff, I was the biggest butter advocate out there. Have no fear, we still have butter. We just try to limit dairy.

Coconut Oil Rice Krispy Treats
Ingredients
- 6 Tbsp Coconut Oil (see notes) Sams Club Members Mark Virgin Coconut Oil
- 10 oz Bag of small marshmallows
- 5 Cups Rice Krispies Cereal
- 1 splash of Vanilla probably ⅛ of a tsp! But a Splash is fancy!
Instructions
- Line a 9×13 square pan with parchment paper or foil (spray foil with non-stick spray.) Or Grease the baking dish with coconut oil. Set aside.
- In a large pan, combine coconut oil and marshmallows over medium heat until completely melted. This should take 4-5 minutes and make sure to stir constantly so the bottom doesn’t burn.
- Once mixture is smooth (no marshmallow lumps), stir in the splash of vanilla and then add the Rice Krispies cereal and mix until evenly coated. Pour into prepare pan and let cool for about an hour. Cut into squares and serve.
