We all have busy nights or times when we really don’t want to be cooking for an hour! Let me provide a solution other than going out to eat. This simple sausage, kale and potato skillet is perfect for when you are crunched for time. Similarly, this dinner can also be a great option for those nights when you are lacking motivation to cook. It is so tasty and pretty simple. Full disclosure, you will have to chop a fair amount but it you have older kids, they can practice their chopping, dicing and slicing skills.

How did this Recipe come to be?

How did I come up with this yummy recipe? I wish I would take full credit but I can’t. Frequently, I find myself in a dinner rut. Meaning, I get bored of my “go-to” recipes or I just need some dinner options that are cheap, quick and delicious. In previous posts I talk about this important recipe trifecta (you could throw in there easy bit I think that’s implied when I mention “quick” and so the trifecta still stands… ok moving on!) So, I found a similar recipe but I wanted to use purple cabbage because I really like it. Asa result, I adjusted the recipe to make it more convenient and added another super food, red cabbage, to the ingredients list.

One reason I love this dinner so much is that it’s full of color which means it’s full of nutrition. The dark green kale and the purple cabbage are so pretty on your plate and they provide loads of vitamins and minerals. The Mayo Clinic informs us that, “Kale is a nutrition superstar due to the amounts of vitamins A, K, B6 and C, calcium, potassium, copper and manganese it contains.”

The Health benefits do not stop there. Web MD states, “Red cabbage may also help with weight loss since it’s low in calories, has a high water content, and is a good source of dietary fiber and other nutrients such as antioxidants. These factors help you feel full without consuming too many calories, making red cabbage a healthy addition to your diet.” Red Cabbage is also rich in vitamin K which promotes bone health. Potato, Kale, cabbage skillet

Sausage, Kale, Cabbage and Potato Skillet Dinner

Ingredients

  • 3 Tbsp Olive oil
  • 6 Red potatoes (6-8 potatoes diced and boiled in salted water until fork tender)
  • Salt & pepper, to taste
  • 2 tsp Dried thyme
  • 1 Kielbasa Sausage, sliced
  • 1 Onion, medium, thinly sliced
  • 1 Tbsp Garlic, minced
  • 2 cups kale, ribs removed and roughly chopped
  • 1 cup Red cabbage, finely chopped optional
  • 1 Lemon, optional
  • Creole Seasoning, sprinkle over the top then incorporate) optional
  • Salt and Pepper to taste

Instructions

  • Heat 2 tablespoons olive oil in a large 15-inch skillet over medium-high heat . Add potatoes and cook without stirring until they begin to turn golden brown. Stir and continue cooking until all sides are crispy, about 3-5 minutes. Season potatoes with salt, pepper and thyme.
  • Lazy potato, no boil method: dice the potatoes super small and cook them in the skillet. Cover the pan with a lid or tin foil and cook until potatoes are tender and then add remainder of ingredients.
  • Add another tablespoon of olive oil and the chicken sausage to the potatoes. Cook until all sides of the sausage are crispy, about 4-5 minutes. Once crispy, add onions and cook until just tender, stirring often, about 5 minutes.
  • Reduce heat to medium and add the garlic, stirring until fragrant, about one minute. Add the kale. Stir often and cooking until the kale is wilted, about 3 minutes.
  • Squeeze a lemon over the top of the dish. Sprinkle salt, pepper and creole seasoning of over the top and stir. Serve and Enjoy!
