Tostadas are easy but I have to tell you that they just got even easier! So, I was perusing Pinterest and Street Corn Tostados presented itself, like a concourse of Angels praising this Holy dish. Initially, I was searching for some vegetarian type of dinner for budgetary reasons but then I didn’t realize I would find a meal so simple and delicious. Full disclosure, I altered the recipe when I made it and took away the vegetarian aspect to this meal. I added just a 9 oz Chorizo and I’m happy I did!
Street Corn Tostadas are also Cost Effective
Canned corn, and refried beans are very cheap items. I got mine for $1.00 or less per can. I usually make my tostada shells by frying corn tortillas but if the pre-made kind are on sale, I put them in my cart! You can make this meal even cheaper by making homemade refried beans but I really like the convenience of this meal and so I stick with the canned option.
In addition, the Chorizo is also so cheap, a mere $1.25 for 9oz. Thus, I like using it here and there to add some extra “oomf” to my meal. A little goes a long way! That said, these tostadas are still really good without the chorizo. Furthermore, the ingredients are things that you can store in your pantry, which means you can make these tostadas when life is crazy and you didn’t have time to plan ahead (you may have substitute some ingredients but the basics of this recipe are in your pantry!)
Talk about Convenience!
These Amazingly yummy Street Corn Tostadas are so easy to make. Here’s a quick run-through of the whole process. First, make the corn mixture by adding corn, mayonnaise, red onion, cilantro, lime juice, salt into a bowl. You can add 2 tablespoons of Cotija cheese (this cheese has a stronger flavor) or Queso Fresco to the corn mixture or reserve it for topping. Next, warm up the refried beans in a medium sized pot or you can also heat it in the microwave. If you want to use Chorizo, cook that up in a pan or moit this step entirely. Then, spread the beans on the tostada and top with the corn mixture, cheese and chorizo. Finally, you can either broil the tostadas or eat them as is! Of course, either method is yummy and you’ll want to stuff your face!
Street Corn Tostadas
Ingredients
- 2 15-ounce cans whole kernel corn, drained
- ½ cup mayonnaise (Best Foods)
- ½ cup finely chopped red onion
- ⅔ cups finely chopped cilantro
- 1 tsp chili powder
- Juice of a lime
- ¼ teaspoon salt
- 2 tablespoons Cotija cheese or Queso Fresco plus more for topping
- 2 15-ounce cans refried beansI
- 16 tostada shells
- chili powder to season for topping, optional
Instructions
- In a large bowl, add corn, mayonnaise, red onion, cilantro, lime juice, salt. You can also add 2 tablespoons of cotija cheese or Queso Fresco to the corn mixture or reserve it for topping. Also, I usually sprinkle in some chili powder at this point because I like a little spice. Mix together with a spoon until the corn is evenly coated with all the ingredients.
- Heat up the refried beans in a medium sized pot or you can also heat it in the microwave in a glass dish for about 2 to 3 minutes, or until fully heated through. Set aside. I usually just use the stove method. Set oven to Broil.
- To assemble the tostadas, spread a couple spoon fulls of refried beans onto each tostada and top with a scoop or two of the street corn mixture. Broil the Tostadas for a couple minutes until tostadas brown a bit. Sprinkle with some cotija cheese and a dash of chili powder. Enjoy!

Instant Pots are great for beans. I have borrowed my friend’s Instant Pot many a time when I forgot to soak my beans and it cooks beans so fast! I feel the 6 quart is big for what I would use it for but that’s just my opinion. Also, not going to lie, I do not know where on earth I would put this in my kitchen.
