Shish Kabobs are a great dinner for summertime! You won’t have to deal with a hot kitchen with this meal. Not to mention, Shish Kabobs are also pretty inexpensive which makes me and my budget happy. Grilling is the best! Kabobs are also pretty quick, easy and it’s a dinner I don’t have to make, score! My husband is the grill master and I may just let him keep that title forever. He’s amazing at cooking meat and I love getting a break from cooking every now and then.
Metal Skewers are a Game Changer
A while back, we used the common wooden skewers when we made Shish Kabobs. After we used them they would go straight into the trash. Tis’ the fate of every wooden Skewer after grilling. Frequently, during summer months I would put Kabobs on our meal plan and forget to put skewers on my shopping list. Curse you, mom brain of mine! Have any of my readers out there, experienced this skewer issue? Anyway, my husband found these great metal skewers. Simply, wash and reuse till your heart’s content. I love them! Just be careful your kids don’t get to them. Forget running with scissors, let’s avoid shish kabob-ing our kids.
Shish Kabob not your Typical “One Pot Wonder”
One of the biggest perks of making Shish Kabobs is that it’s basically a meal on a stick. You gotta love the simplicity there. Despite the convenience, I still have to make something else in addition to the delicious Shish Kabobs to ensure my family of 8 walks away feeling full and happy. I would have to make so many Shish Kabobs if I didn’t make a side dish.
Great Kabob Side Dish Options
- Roasted Cauliflower
- Corn on the Cob
- Rolls
- Flat bread or Naan Bread
- Rice (Wild Rice is a great option)
- Biscuits
- Potato Salad
- Rice and Beans
The Best Chicken Shish Kabobs
Ingredients
Chicken Marinade
- ¼ cup extra virgin olive oil
- ¼ cup balsamic vinegar or other vinegar
- 2 Tbsp soy sauce
- 2 Tbsp Worcestershire sauce
- 3 Tbsp lemon juice
- 3 Tbsp brown sugar
- 1 tsp dried rosemary
- 1 Tbsp Dijon or Spicy Brown mustard
- 1 tsp salt
- ½ tsp ground black pepper
- 1 tsp garlic powder
- 1½- 2 lb chicken breast or tenders cut into bite size pieces
Shish Kabob Vegetables
- 1-2 red bell pepper
- 1-2 green bell pepper
- 1-2 zucchini
- 1 large yellow or purple onion
Instructions
- Marinate for at least 30 minutes.
- Place chicken and vegetable on the skewers.
Grilling the Skewers
- Preheat grill to 400°. Grill chicken for about 7 minutes on each side or until cooked through. Total grill time should be 15- 20 minutes.
