Memphis Tennessee will always hold a special place in my heart. My husband attended Optometry School in good ol’ Memphis. Of course, we are beyond grateful for his formal education he received there but I have to be honest, one of the most important things we took away from Memphis was their amazing food. My husband learned the ways of smoking meat and how to make the best fried chicken. Not to mention, how to make a killer coleslaw.
The Trick to Amazing Coleslaw
The Dressing
The Dressing is obviously one of the most important parts of the coleslaw but that’s not the main tip I’m talking about. However, this coleslaw recipe has an absolutely amazing dressing. I remember eating a the BBQ shop (a rare occasion as poor students) and eating their delicious coleslaw. After we ate that pulled pork sandwich, we knew we were a bit obsessed with that coleslaw. Consequently, my brilliant hubby went home and created a copycat version and it might be even better than the original.
The Cabbage
Are you ready for the big trick to making amazing coleslaw. Drum Roll, please! Ok, the drum roll might be too much. Using a fresh head of cabbage versus a store bought pre-shredded bag really makes a difference in the flavor of coleslaw. The bagged shredded cabbage isn’t as fresh and often you can taste a little bitterness in it. The downside to the tip is that cutting cabbage can be difficult if you don’t have a really good knife. And yes, it takes longer but if you have the time, it makes the coleslaw so much tastier.
Memphis BBQ Shop Coleslaw
Ingredients
- 1 medium head of cabbage washed, cored, and shredded
- 2 medium carrots peeled, grated
- 1 medium green bell pepper cored, seeded and diced fine
- 3 Serrano chiles seeded and finely chopped or two jalapeños
- 1 onion finely chopped
Coleslaw Dressing
- ⅓ cup mayonnaise
- scant ¼ cup dijon mustard
- ¼ cup cider vinegar
- 1 Tbsp oil
- 2 tsp salt
- 2 tsp celery seed seasoning
- 1½ tbsp sugar
- 1 tsp black pepper
Instructions
- Cut and mix all the vegetables and place in a large bowl.
- Combine dressing ingredients in separate bowl.
- Add the dressing to the vegetables and Bam! You are done!
I’m wasn’t a huge coleslaw fan but this coleslaw recipe has won me over. I loved eating it by itself and adding it on top of shredded meat to other meals to add more filling and flavor.
