The Best Blueberry Waffle Recipe

I love these blueberry waffles! Blueberry pancakes have always been a favorite breakfast of mine. So, when I heard about combining my love of blueberries and waffles, I just knew, deep down in my soul, that this was right. All joking aside, this blueberry waffle recipe is great!

I altered her recipe a bit because I like making my waffles more light and fluffy and so I added more eggs and beat them separately. It makes a big difference when you do this. A Dairy Free Option

Also, we eat mostly dairy free (due to allergies/ intolerance) at our house. Although I love butter, I always substitute coconut oil or canola oil. It would be cool to make two different breakfasts every morning to accommodate everyone. Wait…what am I saying? Would it really? No, I’m good only making one breakfast! To solve this dilemma, I’ll tell my dairy-loving kids to just add a glob of butter on top of their waffles and bam everyone is happy!

Let’s Talk Toppings!

Waffles topped with the basic maple syrup are delicious. However, I love to kick it up a notch occasionally with some whipped cream and fresh fruit. If your dairy free they do make whipped almond cream. That’s heaven on a plate right there! For those of you who want to go dairy free, I will also whip up canned coconut milk. As a side note, I will share that trick in another post! On the other hand, my husband is more of a “waffle purest” (I think I just made that up) and prefers just a dusting of powdered sugar or as my kids and I like to call it, a touch of snow!

Light and Fluffy Waffle Tutorial

Blueberry Waffles

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp kosher salt
  • 4 tsp baking powder
  • 1 Tbsp white sugar
  • cups  milk Dairy Free: almond milk
  • 3 eggs, separated
  • 6 Tbsp butter, melted Dairy Free option: sub Coconut oil
  • 1 tsp vanilla extract
  • ½ tsp almond extract
  • 10 oz blueberries

Instructions

  • Preheat the waffle iron. Stir together the flour, salt, baking powder, and sugar. Beat egg whites until they form stiff peaks, set aside. Beat egg yolks on high speed until thick and lemon color about 5 minutes.
  • Add the milk or almond milk and stir to combine. Add the melted butter or coconut oil, vanilla, and almond extract. Stir to combine.
  • Stir in the blueberries and pour onto the hot waffle iron. I like to cook mine golden brown. Serve with fresh fruit, whipped cream (whipped coconut cream), syrup or powdered sugar, Enjoy!
