My mother in law made the best chicken salad sandwiches for my baby shower when I was pregnant with my first baby . I fell in love with them. It was love at first sight; I just knew we were destined. Call it pregnancy cravings, but I thought everything about these chicken salad sandwiches was so tasty.
Over the years, I have made these awesome chicken salad sandwiches for my friends and I get raving reviews on how delicious they taste. The only thing I have changed about this recipe, is that I will occasionally add green onions. Other than that, I never felt the need to change the recipe.
Basic Ingredients and yet Amazing Flavor
This salad is very basic. The flavors are simple but people frequently ask me… “what seasonings did you put in there?” Salt and Pepper are the only two seasonings that I add to this salad. However, I will say this, when I braise the chicken and then bake it, I may sprinkle it with some cayenne pepper! Yum!

My 1-hour rolls are so easy to make and so yummy! The original recipe calls for all-purpose flour, but I like to shake things up a bit every now and then. Sometimes, I use half whole wheat and half all purpose flour. The results are just as amazing! Find the Rolls Recipe Here!
Another way to prepare this chicken salad, is to use a rotisserie chicken. If you can get a good deal on a rotisserie chicken , it can be very worth it. Especially, for those busy nights, the convenience factor of not having to cook your chicken is a major plus.
Chicken Salad Sandwiches
Ingredients
- ¾ cup mayonnaise
- 2 cups stocks celery, chopped
- 2 cups purple grapes, cut in half you can use less or more
- 1-2 green onions, chopped
- 1-2 boneless, skinless chicken breasts; cooked and cut into bitesized pieces or shredded or use an inexpensive rotisserie chicken, get the meat off and shred it.
- chopped toasted walnuts, optional
- Bread, Croissants, or rolls
Instructions
- Cook the chicken ahead of time. (you can boil it but I like to do a quick braise and then bake it on the oven.)
- Mix all ingredients together in a large bowl.
