The Best Fluffy German Pancakes

Breakfast, one of the greatest words ever invented. I’m pretty sure there is some science to back that claim up. Along the same vein, German Pancakes are one of the reasons why the word “Breakfast” creates so much joy the hearts of so many. German Pancakes are fluffy and covered in butter. The hint of salt pairs so well with the myriad of sweet toppings that typically grace this wonderful breakfast. If you haven’t tried German Pancakes yet, please give this recipe a try. What do I put on these delicious Pancakes?

The sky is the limit when it comes to topping off these bad boys (AKA German pancakes, I would not want to mislead you to think that I’m literally going to top some bad boys with fruit). Here are some of my favorite topping ideas.

German Pancakes for Dinner? Yes, please!

Every Friday I either will make Homemade Pizza or Breakfast for dinner. My kids love it and it’s easy to prepare. I have made German Pancakes for dinner for years but sometimes I would feel bad because I didn’t serve a vegetable. Recently, I have added a side to the German Pancakes that is easy and some thing my kiddos really enjoy and that is, tater tots. You can always make your own roasted potato wedges but I like the simplicity of this. We all need those convenience meals, am I right?

Is there a Dairy-Free Option?

I have spoke with some of my friends and family about how I alter recipes to make them dairy-free. Before I jump into how I make these pancakes without dairy, we need to discuss what I mean by Dairy-free. Some people include eggs in the dairy category. However, I see eggs as a protein and so all of my dairy-free recipes still include eggs, I just omit things like cow’s milk, cheese, cream, and yogurt. Healthline suggests:

“A dairy-free diet excludes all dairy products. This category includes milk from any animal, as well as any product made from this milk, such a cheese, yogurt, butter, and cream. Yet, people who follow this eating pattern may still eat other animal foods like meat, fish, shellfish, and eggs.”

So, how do I make German pancakes without the cow’s milk or butter? I substitute unsweetened almond milk for the milk and use coconut oil for the melted butter. The Dairy-free version does not puff up as much but the coconut oil adds such a yummy flavor. Also, I add less coconut oil (about 4 Tbsp) and they come out great!

German Pancakes are fluffy, buttery and so yummy. Just add powdered sugar and lemon juice or syrup or my personal favorite, blueberry syrup to complete this delicious Breakfast!

Equipment

Ingredients

  • 1 cup milk
  • 1 cup flour
  • 6 eggs
  • 1 tsp salt
  • 6 Tbsp butter melted

Instructions

  • Preheat oven to 450°. Place 6 Tablespoons of butter in 9 x 13 pan and place the pan in the oven to melt the butter. Once it's all nice and melted, take it out of the oven. Make sure not to burn the butter.
  • While the oven is heating up and the butter is melting, blend 1 cup of milk, 1 cup of flour, 6 eggs and 1 tsp salt in a blender. Just pulse it a few times until well combined (don't over-blend).
  • Pour the egg mixture into the pan over the melted butter. Bake @ 450° for 15-20 minutes.
  • The pancakes will be huge and puffy right out of the oven (they begin to deflate once you take them out of the oven- that's normal). Top them with maple syrup, applesauce, jam, fruit, powdered sugar and lemon juice, or fresh blueberry syrup. Enjoy!
