This Chicken Tortilla Soup recipe is amazing! This soup is simple and so delicious and the fresh toppings make for a great dinner all year round. The toppings add so much yummy texture to this soup! Try cutting your cheese into cubes it creates this “melty” texture (I’m sure that’s a thing) that is a little different than just shredded cheese! So, if you like a variety of texture in your food, this soup is a winner.
Tortilla Soup
Ingredients
- ¼ cup oil
- 1 onion
- 1 garlic clove pressed or minced
- 4 Roma tomatoes seeded and chopped
- 4 oz can diced green chilies
- 10 oz Rotel tomatoes with green chilies
- 49 oz Chicken Broth
- ½ tsp Cumin
- Salt and Pepper to taste
- 1 Chicken breast cut in bite-size pieces
- Corn Tortillas 1 cup of oil to fry the strips if you don't own a fryer
Instructions
- Saute' tomatoes, onion, garlic, green chilies until onion is transparent.
- Add can of Rotel tomatoes and chicken broth.
- Add Salt and Pepper, Cumin. Bring mixture to a boil. Then add the chicken. Once Chicken is cooked through lower heat and simmer approximately 15 minutes.
- Cut the tortillas into strips and fry in the fryer or in a pan with 1 cup of hot oil.
- Soup Toppings: Avocado, cheese, lime juice, green onions, cilantro, sliced jalapeños
Fresh Tortilla Strips
We make our own tortilla strips. It’s an extra step but it’s so worth it. All you have to do, is cut some corn tortillas into thin strips. Next, you place the strips into the fryer in small batches. Fry for a few minutes until golden brown and Bam! Finally, you add salt and enjoy! We have had the same Rival deep fryer for about 12 years. This tortilla soup is amazing! I love this recipe so much more then the one I used before. I love that it used both canned and fresh tomatoes and I loved that I now understand why my chicken always tasted overcooked before. I have always cooked my chicken first before making the soup instead of putting it in raw and cooking it as the soup simmers.
