What’s for dinner? Ah yes, the question that has plagued man since the beginning of time. Of course, in earlier days it was a much simpler answer to that infamous question, “we are eating whatever I can hunt and shlep home… with a side of random vegetation.” Now things are a bit more complex. There are so many ingredients and types of meals you can make. Not to mention, you have to consider the financial aspect as well. So, this can be a pretty overwhelming question. But I’m here to give you some inspiration for your weekly menu. I like having a variety of meals that are healthy, affordable and really yummy. Here is my last weekly dinner menu.
Last Weeks Menu
Tuesday: Thai Coconut Chicken
Wednesday: Homemade Hamburgers
Thursday: Chicken Tinga Tostadas
Friday- Chicken nuggets and veggies (Date Night for mom and dad!)
Saturday- My “Summer” Salad
Sunday- Thai shrimp soup (this one is so good!! I add garlic chili paste to the recipe)
Monday- Pesto Chicken Pasta (braised some seasoned chicken, finished baking it in the oven, mixed cooked noodles, sliced chicken and a pre-made pesto sauce together and finally added Kale. Easy and Delicious)
